Tasty cuisine to tempt your tastebuds
My friend Robin enjoys cooking and from time to time has given me recipes for some of his favourites. He has kindly agreed to share some of these and will add a few here from time to time.
His motto is - The secret to good cooking is the quality of the ingredients.

Recipe for Jerked Pork or Chicken

A tasty recipe for pork or chicken (serves two)
Ingredients
A rack of pork ribs or pack of chicken thighs (approx 8) or even a mixture of both
White wine vinegar
Soy sauce
a couple of chillis (fresh or dried)
onions
ginger - fresh or spice
all spice
dried thyme
lime juice (from a bottle is fine)
Preparation
Put in food processor :-
one onion
one or two chillis (to taste)
1 inch cube of fresh ginger or one teaspoon dried ginger
75 ml white wine vinegar
75 ml soy sauce
1 teaspoon of all spice
1/2 teaspoon of thyme
1 tablespoon lime juice
Blend until a thick paste
Take skin and excess fat off chicken thighs
Put pork ribs or chicken thighs in casserole dish and cover with prepared sauce
Cook (covered) in oven on a low heat (approx 150 C) for approx 3 hours hrs until sauce is thick and meat is falling off the bone.
Serve and enjoy
Note: if your chicken/pork is really done but your sauce is still too runny - transfer the sauce into a pan and boil it down until it is good and thick.
